Vegan Sunchoke & Kale Mashed Potatoes

Ingredients

·3 cups gold potatoes
·1.5 cups diced sunchokes
·2 cups chopped curly kale
·1/2 teaspoon salt, or to taste
·Pinch black pepper, to taste
·1/2 cup nutritional yeast
·3/4 cup unsweetened almond milk
·1/4 teaspoon fennel seed
·1/2 teaspoon dried ground sage
·2 cloves garlic, finely diced
·1/2 chili pepper, finely diced (optional)

Directions

Preheat oven to 375°F. Boil potatoes & sunchokes until soft enough to mash. Strain the liquid, then place the potatoes and sunchokes in a 9" by 9" baking dish. In the baking dish, add remaining ingredients, except the kale. Mash everything together.. Once a creamy mashed potato consistency is reached, then mix in the chopped kale. Bake for 25 minutes on the top rack. Allow to cool for a minute or two, then serve and enjoy!
