Beef & Cabbage Stir Fry

Ingredients

For the sauce:
·2 tablespoons soy sauce
·1 tablespoon sesame oil
·1 tablespoon sriracha, or more to taste
·½ tablespoon brown sugar

For the stir fry:
·½ head napa cabbage, shredded
·1 cup shredded carrots
·1/3 cup thinly sliced leeks
·½ tablespoon olive oil
·½ lb. lean ground beef
·2 cloves garlic, minced
·1 tablespoon fresh grated ginger
·Pinch of salt and pepper
·1 tablespoon sesame seeds, for garnish

Directions

In a small bowl stir together all stir fry sauce ingredients, then set aside. Heat a large skillet over medium heat. Once hot, add the olive oil, ground beef, garlic, ginger, and a pinch of salt and pepper. Cook beef for about 5-6 minutes, or until browned. Add leeks, shredded cabbage and carrots to the skillet and continue to stir and cook until the cabbage is slightly wilted. Stir in the prepared sauce to coat. Sprinkle sesame seeds on top, along with a drizzle of sriracha, if desired. Then, serve.
